Low Fat Elk Barbecue
- 1 lb. ground elk

- 1/2 onion diced
- 2 cloves of garlic
- 1/2 bag of stir fry veggies diced (we use Birds Eye brand)
- 1 cup of favorite BBQ sauce
- fat free chicken broth - optional to thin BBQ mixture
Take the 2 cloves of garlic and 1/2 onion diced. Use cooking spray in your pan. Then sauté the onion, garlic, the pound of ground elk and cook. Dice 1/2 bag of stir fry veggies cooking for few minutes. Then add 1 cup of your favorite BBQ sauce and continue to cook If you want to thin the mixture down a little, I use fat free chicken broth Very simple and quick and don't forget the lite rolls.
