Elk Stroganoff Recipe

Elk Stroganoff
  • 1 package elk tips
  • 2 Tablespoons olive oil
  • 1 onion, chopped
  • 1 small can mushrooms
  • 2 cups milk
  • 1 can cream of mushroom soup
  • 3/4 teaspoon garlic
  • 3/4 teaspoon oregano salt & pepper (to taste)
  • 3 Tablespoons corn starch
  • 1 cup sour cream

Brown elk tips in olive oil and sauté with onion and mushrooms. Remove meat from pan and set aside. Add milk, mushroom soup and seasonings to the pan, making sure mixture is over low heat. Mix cornstarch with cold water and add to pan. Heat this mixture until desired thickness is reached (increase or decrease cornstarch depending on how thick you want your sauce). When heated through and thickened, add sour cream and heat (do not boil). Add meat and heat all ingredients. Serve with noodles.
